This tea, also from Fujian Province, is made from tender new buds that are covered in silver-white hairs. Because of its silvery appearance, China White, or Fujian White.
Characteristics This is the perfect white tea. The leaves, that really do look like silver needles, are picked on only two days a year and are processed entirely by hand. It is very expensive but wonderful.
Brewing hints Brew 2 teaspoons in a scant 1 cup water at 185°F. Infuse for 15 minutes.
Drinking recommendations An all-day tea. Drink alone, without milk or sugar as a refreshing digestif.
