Leaf: Dark green half-spheres with red edges. Brew: Rich yellow, sweet scent with a hint of osmanthus flower and lingering aftertaste.
Scoop: Brought to Taiwan from Mainland China in the 1860's, Dong Ding (Tung Ting) was found to thrive on its eponymous mountain. The earthquake of 1999 left Dong Ding plantations untended, when rediscovered, the tea had a new, sweet flavor from cicada deposits. Dong Ding is now grown without pesticides.
Character: The young leaves and buds brew a pale greeny-golden cup that has a superb flavour and a subtle floral aroma. It is one of the finest green oolongs.
Brewing Tips: Brew 3g (0.l0oz) in 200ml (7fl oz) water at 85°C (185°F) for 1-2 minutes. Strain and add more water for several more short steepings.
Brewing Dongding Oolong at home

Preparation of tea sets / purple sand teapot, fair cups, tea cups, tea tray, tea holder, tea caddy, and tea props
Preparation of water /100℃ boiling water
Selection of tea / Dongding Oolong
1 Fetch appropriate amount of tea from tea caddy.
2 Pour water into the purple sand teapot, fair cup, tea cups, and warm these utensils.
3 Put some tea with a teaspoon into the pot.
4 Pour some water into the pot till tea soup overflows.
5 Scrape off the floating foam and cover the pot with a lid.
6 Filter the tea soup into fair cup.
7 Distribute the tea soup in fair cup to each smelling cup.
8 Buckle the tea cup on the smelling cup, touch the bottom of the smelling cup with both index fingers and overturn the two cups to pour the tea soup to the tea cup from the smelling cup.
9 Pick up the smelling cup, rub hands and smell the tea fragrance.
10 Drink the tea.

1 The amount of Dongding Oolong should be about 1/4 pot.
2 The brewing method of Dongding Oolong from Taiwan can be adopted. The smelling cup is helpful for appreciating the true nature and flavor.
